Healthier Chocolate Chunk Banana Bread

Healthier Chocolate Chunk Banana Bread

Warm, chewy banana bread with melty chocolate chunks hidden inside… slathered in butter. If I were a judge at a county fair, I’d give this banana bread the Best of Show ribbon!

What makes this banana bread healthier, you ask? Well first, there’s no refined sugar. All you need are overripe bananas and honey! I also used whole wheat flour instead of white flour. You can’t even taste a difference. It’s always a score when I can find a recipe that’s easy, healthy, and delicious!

Need one more reason to make it? Okay. You can mix everything up in one bowl. I’m telling you, banana bread couldn’t get much easier. Are you ready? Go preheat that oven!

Recipe adapted from Half Baked Harvest

How many: 9 servings

Start to finish: 1 hr 10 minutes

What you’ll need:

  • 3 large overripe bananas, mashed

  • 2 eggs

  • 2 teaspoons vanilla

  • 1/4 cup butter, melted

  • 1/4 cup honey

  • 1 1/2 cups whole wheat flour

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1 cup semi-sweet chocolate chunks

What you’ll do:

  1. Preheat the oven to 350F and line a 9x5” baking pan with parchment paper.

  2. In a large bowl, mix together mashed bananas, eggs, vanilla, melted butter, and honey. Add the wheat flour, baking soda, cinnamon, and salt and stir until just combined. Fold in the chocolate chunks.

  3. Bake for 45 to 50 minutes, checking at 40 minutes to make sure it doesn’t get overdone.

  4. Once you take the banana bread out of the oven, let it cool for 10 minutes in the pan, then transfer to a wire rack. Or eat it right out of the pan, steaming and smeared with butter!
