Fig Energy Bites
Hello, happy Monday! Today I’m sharing my very own fig energy bite recipe. I like to keep something sweet and healthy on hand for when the munchies hit in the afternoon, so I created these fig energy bites. They’re made of dates, figs, flax seed meal, almond butter, vanilla, cinnamon, and a pinch of salt. I like to roll them in coconut flakes for a little extra texture. They’re SO good! Here’s what I love about these energy bites:

These energy bites would be a great snack to take on a hike, picnic, or just keep stashed in your fridge for when times get tough. Beware, though: they are so yummy they’re a little addicting!
How many: about 20 energy bites
Start to finish: 15 minutes
What you’ll need:
15 dried figs (about 3/4 cup)
1/2 cup dates
1/4 cup flax seed meal
1/4 cup creamy almond butter
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup shredded coconut for rolling
What you’ll do:
Remove the stems and pits from the figs and dates. Combine all ingredients (except the coconut) in a blender or food processor. Blend on high until there are no more chunks of fruit, about 1 minute depending on your type of blender. Remove from blender and roll into 1 tablespoon balls.
Blend the shredded coconut on high for about 10 seconds until finely ground but not powdery.
Roll the energy bites in the ground coconut. Enjoy!
Note: You can store these energy bites in the refrigerator for 2 weeks and in the freezer for up to 6 months.
